***she also said that you can substitute it with really any fruit and that she usually has to make a double recipe to ensure it lasts longer than 15 minutes!  Mmmm...

Very Berry “Clafoutis”

Preheat oven to 400f

750ml / 3 cups fresh strawberries or blueberries         
250ml / 1 cup flour
75ml + 15ml / 1/3 cup + 1 tablespoon of white sugar or fruit sugar
5 eggs
375ml / 1 ½  cup of 18% cream or 50/50 cream
Confectionner’s sugar

 Original recipe: 2 cups fruit, ¾ c flour, 4 eggs, 1 ¼ c. 18% cream

- Butter the bottom of a 9” (23cm)pie plate or a square 8” pan.

- spread fruit evenly at bottom of pan

- sprinkle 1 tablespoon (15ml) sugar over fruit

- Mix flour and sugar in bowl

- Make a well in the flour mixture and add eggs

- Beat with mixer

- Add cream and beat until smooth

- Pour over fruit

Bake for 45 minutes or until a knife comes out clean.

Sprinkle with powder sugar.  Serve hot or cold – as desert or breakfast – great to serve with a breakfast brunch or for breakfast on the go.
