Shrimp in Dill Sauce on Penne

Shrimp in Dill Cream sauce on Penne

For the sauce:
1/2 shallot, diced finely           
1 cup 250ml heavy cream sauce
A few sprigs fresh thyme, stripped      
1/2 cup fresh dill, finely chopped

Add everything except the dill to a small sauce pan and cook uncovered
over medium low heat, stirring every few minutes, until it has reduced
by half, remove from heat.

For the shrimp:
1 cup cooked shrimp, 21-30 or larger   
1/2 cup finely diced red and yellow pepper
2 TBSP butter                   
3 cloves garlic
finely minced 
2 TBSP shallot, finely diced           
Salt and pepper to taste

Melt the butter in a hot pan and cook the shallots for 1 minute, then
add the peppers and garlic, and cook for a minute more. Add the shrimp
and cook everything together for 1 minute. Add the dill to the sauce,
mix it through, then add 1/2 the sauce to the pan. Toss it all together
then add the rest of the sauce and toss to mix. Add your cooked pasta
and toss to coat, check for seasoning and serve hot, garnished with
dill.
