Raspberr & Fig Gratin

Raspberry and Fig Gratin

Serves 4
Preparation time:  5 minutes
Cooking time: 2 minutes
Notes:    This is a simple and fast dessert that you can put together while the after dinner coffee brews!

Ingredients

4 fresh figs, sliced
200g fresh raspberries
1½ tablespoons brown sugar*
Topping
160ml (2/3 cup) sour cream*
3 teaspoons grated orange rind
1 tablespoon Cointreau* or other orange liqueur (you can substitute 2 tablespoons of fresh orange juice)


For the topping, combine all ingredients in a small bowl and set aside.

Divide figs evenly between 4 shallow heatproof dishes (¾ cup/180ml capacity).

Spread two-thirds of the topping evenly over figs, top with raspberries, then remaining topping; sprinkle with sugar.

Place dishes on oven tray, grill about 2 minutes or until sugar is caramelized. Serve immediately.
