As prepared by Chef Breanne Potts of Potts 'n' Pans Personal Chef Service

*Maple Roast Pork Loin*

   - 3 cloves of minced garlic
   - 1 1/2 tablespoons of coriander
   - 1 1/2 tablespoons of curry powder
   - 1/2 teaspoon of cumin
   - 2 teaspoons worcestershire sauce
   - the zest of one orange
   - 3 tablespoons soy sauce
   - 3 tablespoons ketchup
   - 1 tablespoon honey mustard
   - 1/2 cup maple flavored syrup
   - 2 pounds pork tenderloin

Sear the pork tenderloin on high heat until golden brown on all sides.
Transfer the pork to a cake pan and pour the other ingredients over the
pork. Using a silicone brush, paint the pork with the sauce mixture until it
is well covered. In a 375 degree oven bake until the sauce turns into a
glaze and the pork is not pink in the center. About 45-60 minutes. This
glaze can be used on any type of meat and works well as a maranade.
