Pantry Meal Idea: Chicken San Choy Bau

Chicken san choy bau
Serves 4
Preparation Time 10 minutes
Cooking Time 15 minutes
Notes:        This dish is great as a light mid week meal or as a starter for a dinner party.  You could also use small lettuce cups and let your guests add the noodle mixture as they go at a cocktail party.

Ingredients:

50g rice vermicelli noodles*
2 tsp peanut oil*
350g ground chicken*
1 tbsp fish sauce
1 tbsp lime*juice
2 tsp soy sauce*
1 tbsp sweet chilli sauce*
3 green onions* sliced
1 ½ tbsp coriander*, chopped
1 ½ tbsp Thai basil, chopped
8iceberg lettuce leaves* to serve
Hoisin sauce*for serving


Place noodles in a heat proof bowl, cover with boiling water and let stand for 4 minutes
Heat oil in a wok over medium high heat.  Add chicken and fish sauce.  Cook for 3-4 minutes until chicken is no longer pink and breaking up any lumps in the mince.
Add lime juice, soy sauce, sweet chilli sauce and green onions to wok and cook for 2 minutes.  Take the wok off the stove and add the noodles, coriander and basil, tossing together.
To serve, spoon the noodle mixture into individual lettuce cups and sprinkle with hoisin sauce if desired.
