Finger Foods: Cauliflower & Chickpeas

Tastes for Toddlers

 
One year of age and older

 
Bean Burgers

 

1 small onion, finely chopped

2 carrots, peeled and chopped

1 clove garlic, finely chopped

handful of chopped parsley or cilantro

1 tablespoon olive oil

3 cups kidney, adzuki, mung or garbanzo beans

1 ½ cups bread crumbs (substitute ½ cup with ground seeds if preferred)

1-2 eggs

 

Mash beans with hand mixer.  Chop onion, garlic, carrot and parsley and add to beans.  Add breadcrumbs and stir.  Add beaten egg and stir again.  Chill for up to one hour before forming into patty or sausage shape.  Brush with oil and cook in frying pan or on griddle until brown. 

 

Sweet Potato Fries

 

1-2 sweet potatoes or yams

seasoning of choice  for example garlic powder, paprika or plain

 

Cut sweet potatoes into small sticks either by hand or with a mandolin cutter.  Place on an oiled baking tray and cook at 350 degrees for 20 minutes or until soft. 

 

You can also use parsnips, butternut squash, carrots, or potatoes.
