Chocolate Monkey Breakfast

The Last 15 Bruschetta

 Ingredients-serves 4

 

  • Sliced green olives-4 oz
  • White onion-1/4 diced
  • White navy beans-cooked-6 oz
  • Fresh bay leaves-2 tbsp. chopped
  • Oregano-1 tsp
  • Crushed garlic-1 tsp
  • Tomato-1 large diced
  • Olive oil-2 tbsp
  • Tomato sauce-4 oz
  • 1 tsp. raw cane sugar
  • 8 slices of Stonemill toast
  • 3 tbsp. of Parmesan cheese

 

Directions

Combine all ingredients (with the exception of whole grain toast) in a bowl and mix thoroughly.  For best flavor results, allow to marinate in refrigerator for 2 hours prior to serving.  Toast whole grain bread and distribute bruschetta mix on top.  Place on non stick baking pan in oven and broil for 3-4 minutes.  Once removed from oven, sprinkle parmesan cheese over top and enjoy!

 Serve and enjoy.
