Asian Chicken Salad
As prepared by Chef Mike Benninger of Thyme Management

Asian Chicken Salad (serves 4)...

1 cup chopped Chinese cabbage
1 cup chopped Napa or Savoy cabbage
1/2 each sliced red, yellow and orange peppers
1/2 cup cilantro (leaves only)

Dressing...

1 TBSP each of Mirin, lime juice, rice vinegar, fish sauce and light
brown sugar. Add to 2 TBSP of sesame oil and shake to combine.

Mix all the chopped vegetables together in a large bowl and add the
dressing 1 TBSP at a time until it is just shiny. Garnish with more
cilantro or chopped peanuts
